Grilled Chicken Thighs with Brunk Black Blend BBQ Rub

Chicken thighs are the most forgiving cut on the grill, and Brunk Black Blend BBQ Rub is the easiest way to make them taste like you've been smoking all day. This recipe takes about 10 minutes of prep and 25 minutes on the grill — perfect for a weeknight cookout.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 3 tablespoons Brunk Black Blend BBQ Rub
  • 1 lemon, cut into wedges
  • Fresh rosemary, for garnish (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Toss with olive oil, making sure every piece is coated.
  2. Generously coat both sides of each thigh with Brunk Black Blend BBQ Rub, pressing it in so it sticks.
  3. Let the chicken sit at room temperature for 15-20 minutes while you preheat your grill to medium-high heat (about 400°F), setting up for direct and indirect zones.
  4. Place the thighs skin-side down over direct heat. Grill for 6-7 minutes until the skin is deeply charred and crisp, then flip.
  5. Move the thighs to indirect heat and continue cooking for 12-15 minutes, until the internal temperature reaches 175°F.
  6. Rest for 5 minutes, then squeeze fresh lemon over the top and garnish with rosemary before serving.

Tips

Don't skip the rest — it lets the juices settle so every bite stays tender. Leftovers are great sliced into a sandwich the next day with a little extra Black Blend sprinkled on top.
